Thanksgiving Foods

Here's the two things I made for thanksgiving.
Easy Rosemary Garlic Parmesan Biscuits
Skinny Garlic Mashed Potatoes

Easy Rosemary Garlic Parmesan Biscuits
ORIGINAL SOURCE

Ingredients:

  • 2 tbsp melted salted butter
  • 1 tbsp EVOO
  • 2 cloves minced garlic
  • 1/2 tbsp fresh chopped rosemary (I used dried
  • 2 cups Heart Smart Bisquick (I used regular)
  • 3 oz shredded parmesan cheese
  • 2/3 cup skim milk
Directions:

Preheat oven to 400°. Line a cookie sheet with parchment paper.
Melt butter in a small pan, add oil and half the garlic; sauté on low heat about 1 minute.Remove from heat and add chopped rosemary.
In a large bowl, combine biscuit mix, parmesan cheese, and remaining garlic. Stir in milk and mix (do not over mix). Drop batter by heaping tablespoonfuls (about 1.5 oz each) onto prepared cookie sheet.
Bake for 10 minutes. Brush biscuits with melted butter. Bake for 5 more minutes, or until lightly browned on the bottom.



I added cheese on top of the biscuits.

Skinny Garlic Mashed Potatoes
ORIGINAL SOURCE

Ingredients:

2 lbs (4 medium) potatoes, peeled and cubed
4 large garlic cloves, peeled and halved

1/4 cup fat free sour cream
1/4 cup fat free chicken broth

2 tablespoons skim milk
1 tbsp light butter
salt to taste

dash fresh ground pepper
1/4 cup fresh herbs of choice: parsley, thyme, tarragon

Directions:
Put potatoes and garlic in a large pot with salt and enough water to cover. Bring to a boil. Cover and reduce heat. Simmer for 20 minutes or until potatoes are tender.Drain and return potatoes and garlic to pan.
Add sour cream and remaining ingredients. Using a masher, mash until smooth.Season with salt and pepper to taste.

Recipe: Cherry Bit Grapefruit Cupcakes with Cream Cheese Icing

This recipe was slightly adapted from emilybites.
I made my cupcakes into mini's and ended up with about 48 of them so they were about 2 PP each.

Cherry Bit Grapefruit Cupcakes
Ingredients:
1 box of cherry chip cake mix
1 can of diet pink grapefruit soda
2 egg whites

Directions:
1. Preheat oven per directions on cake mix box
2. Line cupcake pan with 24 cupcake liners or use cooking spray to lightly coat 24 spots
3. Combine all ingredients in a large bowl and beat together until thoroughly mixed. Pour mixture into cupcake liners.
4. Bake according to directions on cake mix box. Let cool completely before frosting.

Yields 24 servings. WW P+: 3 per serving


Cream Cheese Frosting
Ingredients:
8 oz 1/3 fat cream cheese
1/2 cup powdered sugar
1/2 cup splenda
1 tsp vanilla

Directions:
1. Combine all ingredients in a bowl and beat with an electric mixer until smooth

Yields 24 servings. WW P+: 1 per serving

Recipe: Diet Coke cupcakes with Chocolate Cream Cheese Icing

This recipe was slightly adapted from emilybites.

Diet Coke Cupcakes
Ingredients:
1 box of chocolate cake mix
1 can of diet coke
2 egg whites

Directions:
1. Preheat oven per directions on cake mix box
2. Line cupcake pan with 24 cupcake liners or use cooking spray to lightly coat 24 spots
3. Combine all ingredients in a large bowl and beat together until thoroughly mixed. Pour mixture into cupcake liners.
4. Bake according to directions on cake mix box. Let cool completely before frosting.

Yields 24 servings. WW P+: 3 per serving


Cream Cheese Frosting
Ingredients:
8 oz 1/3 fat cream cheese
1/2 cup powdered sugar
1/2 cup splenda
2 Tbsp cocoa

Directions:
1. Combine all ingredients in a bowl and beat with an electric mixer until smooth

Recipe: Baked Pizza Spaghetti

This recipe came from emilybites. I loved it and I will make it again definitely!

Ingredients:
- olive oil cooking spray
- 12 oz uncooked whole-wheat spaghetti
- 2 large egg whites
- 1 large egg
- 2/3 cup skim milk
- 3/4 tsp garlic powder
- 1/2 tsp table salt
- 1 1/2 tsp dried oregano
- 9 oz shredded reduced fat mozzarella cheese, divided
- 32 oz jarred spaghetti sauce
- 2 oz turkey pepperoni, finely julienned


Directions:
1. Preheat oven to 400. Coat a 9x13 baking dish with cooking spray and set aside.
2. Break spaghetti into 2-inch pieces and cook according to package directions. When finished, drain and cool.
3. Meanwhile, in a large bowl, beat egg whites and egg until frothy. Stir in milk, garlic powder, salt, oregano and 1/3 of mozzarella. Add cooked spaghetti and stir until thoroughly combined. Spread spaghetti mixture evenly in bottom of baking dish. Bake for 15 minutes and remove from oven.
4. Reduce oven temperature to 350ºF.
5. Spread spaghetti sauce over pasta and sprinkle with the remaining cheese. Sprinkle pepperoni evenly over cheese layer.
6. Return to oven and bake until cheese is bubbly, about 30 minutes.

Yields 10 servings. WW P+: 7 per serving

Recipe: Lemon-Lime Cupcakes

I got this recipe from emilybites and it's AMAZING!

Ingredients:
1 (18.25 oz) box of yellow cake mix (I used Betty Crocker Super Moist)
1 can of diet lemon-lime soda (I meant to use Sprite Zero)
2 egg whites
1 lemon
1 lime
8 oz Neufchatel cheese (also labeled 1/3 less fat cream cheese) - do not substitute fat free
1 c powdered sugar (I used 1/2 c splenda, 1/2 c powdered sugar)



Directions:
1. Preheat oven per directions on cake mix box.
2. Line cupcake pan(s) with 24 cupcake liners or use cooking spray to lightly coat 24 spots
3. Zest both the lemon and lime and set zest aside. Cut both fruits in half. Using a reamer, or by hand, ream/squeeze the juice from half a lemon and half a lime into a large bowl. Set the other halves aside.
4. In the large bowl with the lemon & lime juice, add the cake mix, soda, egg whites and half of the lemon and lime zest. Beat together with an electric mixer until thoroughly mixed. Pour mixture evenly into cupcake spaces, filling each about 2/3 full.
5. Bake according to directions on cake mix box. Let cool completely before frosting.
6. In a separate bowl, squeeze or ream the juice from the remaining lemon and lime halves* and add the remaining zest, the Neufchatel cheese and the sugar. Beat with an electric mixer until smooth and then use to frost the cupcakes.



Yields 24 servings. WW P+: 3 per serving; 126 calories per serving.

Recipe: Hot Dog Casserole

  • 2 cans tomato soup
  • 1 tsp chili powder
  • 2.5 c boiling water
  • 2 c macaroni
  • 1 lb hot dogs
Preheat oven to 350. In a casserole dish mix together the tomato soup, chili powder and water. Add the macaroni. Cut the hot dogs into at least 6 pieces each and add. Bake for 45 min, stir and bake for another 15 min.

YUMMMMM!

Using the pasta I used (catelli smart in the purple box), campbell's soup and veggie dogs (YUCK!), my casserole was 47 PP for the whole thing. I can't remember how many it's supposed to serve but I'll do more math next time I make it. If you use hot dogs other than veggie dogs, calculate how many PP a pound would be and add those PP to 35 PP (the casserole minus veggie dogs).

Recipe: Boxed Cakes (Josh's Birthday Cake)

Josh decided he wanted a rainbow bit cake. I made it today, sub egg beaters for eggs and applesauce for oil. The portion they suggest (1/10th of the cake) is only 4.7 PP, so with icing on it, I'd call it 6 maybe! :) It smells SOOOO good.

Recipe: A&W Whistle Dogs Re-Done


These were so good, I'm sad that Josh was the only one who made them the first time we tried them in 2010.

INGREDIENTS:
  • 1 thin bun, hamburger or hot dog style works
  • 1 low fat hot dog (or turkey or chicken)
  • 1 slice low fat processed cheese (you can also use unprocessed)
  • 1 slice bacon or turkey bacon
  • any normal hot dog toppings you desire
DIRECTIONS:
  • Cut the hot dog in half “hot dog style” and leave it slightly attached. Put the flat sides down into a frying pan (without oil is okay since hot dogs have enough moisture inside). Let it brown.
  • In the mean time, put the bun in the toaster or the broiler to toast it. Cook your bacon in another frying pan or the microwave.
  • When the hot dog is done on the flat side, flip it over and put the cheese on the now-browned side while the opposite side browns.
  • Dab the grease off the bacon and lay the bacon on top of the cheese. Place the hot dog on the hot dog bun and leave it under the broiler until the cheese melts.
  • Place hot dog toppings on.
  • Eat.

With the hamburger bun we used tonight, I had to cut the hot dog at about the 3/4 mark and lay the 1/4 next to the 3/4, filling most of the round bun. One square slice of processed cheese covered perfectly.


Soooooo good!

UPDATE: as I make these now I toast the bun, lay the bacon on the toasted bun, then the cheese, then the hot dog, add my toppings and just let the cheese melt like that. I don't use the broiler

Recipe: Banana Cake

This is a repost of a tumblr post I made in summer 2010. I baked this cake to take to work for my birthday.


BANANA CAKE WITH CREAM CHEESE ICING

Mmmmm this cake was so good. It all started last year when my neighbour brought a banana cake with cream cheese icing to work. It was so good and she gave me a HUGE piece. Luckily it was on a Wednesday so I didn’t have to answer to the WW scale for another 6 days.

Since that time, I’ve been obsessed with it and I was lazy in trying to find a recipe. This recipe is my neighbour’s changed-up recipe that was already WW friendly but I changed it a tiny bit more. I changed the oil for applesauce and changed the time to put it in a cake pan instead.

I served it for an early birthday cake for my mom and then took it to my WW meeting last week and shared little pieces with the WW members there. I heard NOTHING but compliments on how moist it was and how yummy, etc. It was amazing and totally made me feel better about my cooking skills… Josh always mocks them lol.
I got the frosting recipe from a WW cookbook we bought this summer.

BANANA CAKE:
INGREDIENTS:
  • 1 1/2; cups whole wheat flour
  • 1 tsp. baking soda
  • 1 c. Splenda
  • 2 medium bananas, mashed (about 1 ½ cups)
  • 1/2 c. egg beaters
  • 1 tsp. vanilla
  • 1/4 c. applesauce
  • 3/4 c. fat-free yogurt (I used greek yogurt)
DIRECTIONS:
Mash bananas and dump in mixing bowl. Add in the eggs, vanilla, applesauce and yogurt and mix with a fork until well blended. Add sugar, flour and soda on top and mix it all together. Grease loaf pan (I used calorie free margarine spray). Be sure to grease the sides of the pan as well. Bake at 350 degrees for 55-60 minutes in a loaf pan or about 30 minutes in a cake pan. I doubled the recipe (2011) and cooked in a lasagna pan. It’s done when a knife poked in comes out clean.

FROSTING:
INGREDIENTS:
  • 1 8 oz. package fat-free cream cheese, at room temperature
  • 1 1/4 c. confectioner’s sugar
  • 1/2 c. fat-free Greek yogurt
  • 3/4 tsp. vanilla extract
INSTRUCTIONS:
Using an electric mixer on high speed beat cream cheese, confectioner’s sugar, yogurt and vanilla in a medium bowl until smooth, about 1 minute.
